So I was at work the other day cooking up some cabbage (please note, I frigging LOVE cabbage) and I was thinking about how I could get more cabbage into a meal and then I remembered seeing a post about cabbage rolls.
So I pulled out my phone, googled easy to make cabbage rolls and saw all the ingredients and the method and decided they seemed way too hard to attempt, not easy at all! However, me being the over confident wannabe master chef that I am, I had of course already committed myself to making them. So instead of looking at a recipe and following it step by step I treated this meal like I treated most of my business school papers…
I totally bullshitted my way through it.
The result I got was about the same as I would get with most papers that I hand in too.
(If any of my professors or future employers are reading I was totally kidding about that bullshitting bit, I work REALLY hard)
So anyway here is my really super duper easy recipe for cabbage rolls. From my lazy self to you, enjoy.
- whole cabbage
- 1 cup grated cauliflower
- 1/2 cup grated carrot
- 1/4 cup finely chopped mushrooms
- 1 tsp curry powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp crushed ginger
- 1 tsp crushed garlic
- 1/2 cup finely chopped bacon (optional)
- Butter for cooking (or substitute for a healthy oil)
Steam whole cabbage leaves in the microwave for 3 minutes (boil on high) or until they become soft, put to side.
Add butter enough butter to thinly coat a fry pan then add rest of ingredients (minus cabbage leaves) and leave until cooked (approx 5 mins)
Once filling is cooked add spoonfuls to middle of cabbage leave and fold one side over then the two beside it and then roll tightly (does that make sense? just roll it like a kebab lol)
Add more butter to fry pan, place rolls gently inside, cover and cook for 15 mins on low heat (turning after 7 minutes or so)
NOTE**** I know cabbage rolls are usually made with minced meat but I improvised. Please forgive my crap recipe writing skills.
